Stuffing Muffins with Mashed Potatoes and Gravy

Although for this dish we only used the stuffing recipe. Since I don’t own a muffin tin I made separate stuffing and mashed potatoes. For my mashed potatoes I cook the potatoes, and simply add plant based coffee creamer. Low in calories and fat, coffee creamer makes the BEST creamy vegan mashed potatoes!

Cranberry Sauce

This cranberry sauce is so easy to make. You just put your bag of washed cranberries into a medium saucepan. Add 1/2 cup maple syrup. The zest of one organic orange, plus the juice of the same orange. Add a teaspoon of ground cinnamon and a quarter teaspoon of ground Allspice then cook over medium heat till the cranberries burst.

Pour into desired serving dish and let cool, then cover and place in refrigerator until set, at least one hour or overnight.

Pumpkin Pie

You can’t really have a Thanksgiving dinner without Pumpkin pie! This vegan Pumpkin pie is not only easier to make than a traditional one, but we all think it tastes better too!

Vegan Pumpkin Pie

Serve a fully plant based Pumpkin Pie that everyone is sure to love.

  • 1 1/2 cups all purpose Einkorn flour or all purpose flour
  • 1/3 cup plant based butter
  • 1/2 tsp salt
  • 1 cup cold water you might not use all!
  • 2 1/2 cups pumpkin puree
  • 1/4 cup Brown sugar
  • 1/3 cup maple syrup
  • 3/4 cup plant based coffee creamer
  • 1 tsp pure vanilla extract
  • 1/2 tsp salt
  • 1/4 cup arrowroot powder


For the Pie Crust

  • Preheat oven to 350°F
  • Add flour, salt and butter to food processor and pulse until butter turns to course crumbs.
  • Slowly pour in cold water while food processor runs until dough forms into a ball around the blade.
  • Lightly flour surface and roll dough to approximately 1/4" thickness.
  • Fold dough into quarters and place in pie pan. Trim off any access.

For the Pie Filling

  • Add all ingredients to a blender and blend until smooth.
  • Pour into pie crust.
  • Use any extra pie crust dough to roll out and cut into desired decorations. *Optional
  • Bake in preheated 350°F oven for 1 hour.
  • Allow to cool 1 hour or more. Serve as desired with plant based whipped topping or ice cream.
