After literally years of trying to figure out the trick to making the perfect corn tortilla I finally found it! Today, I share with you the secret ingredient to making soft, pliable and delicious corn tortillas! They are perfectly soft, vegan and best part, they don’t fall apart.
The Journey to these perfect soft pliable vegan corn tortillas
It was a journey to come up with a homemade corn tortilla that is soft, pliable and delicious. Time and time again I tried to make a tortilla fully plant based that wouldn’t fall apart. Or that didn’t taste not so great. But I finally figured it out and now you can make perfect soft pliable vegan corn tortillas that the family and company will love! The best part is that these tortillas don’t fall apart. Nothing spoils a peaceful dinner more that my kids screaming that their taco broke….trust me….for some reason it is the end of the world!
First I made corn tortillas with a recipe I had found on Google. It pretty much was just Masa, salt and water. The tortillas came out tasting better than the bland store bought tortillas. But they fell apart causing a whole lot of stress for my preschooler who doesn’t want to eat a taco salad unless I’ve made taco salad. Then I tried adding some kind of fat in hopes that that would soften things up a bit. Nope, it did improve the flavor. However, the tortillas kept falling apart and all my kids requested I just go back to buying the store bought kind.
I caved, and I bought store bought tortillas. I mean hey, they aren’t that bad. The fact that we could warm them up and they actually stayed together as we ate our tacos was enough for me. Then I noticed an ingredient that I had never used before. Guar gum. Hmmm I thought “next time I’ll add some of that!” Just so happened I’ve had some guar gum in my pantry for maybe FIVE years and never used it because I had absolutely no clue what it could be used for.
So I was very excited. Gave it a go…..and….fail. The tortillas held up slightly better. Yet, they still fell apart way too easy. But I was determined and made them a few more times till I got the guar gum amount just perfect. Not so much to change the flavor in any way, but enough to give us a perfectly soft, pliable tortilla that actually didn’t fall apart. Success!
Perfect Vegan Corn Tortillas
- tortilla press
- 1 cup Masa Harina
- 1 Tbs Guar Gum
- 1 tsp salt
- 2 cups water give or take 1/4 cup
- Add first three ingredients to a medium size bowl.
- Add half the water and begin mixing with a clean hand, slowly adding more water until you have a nice moist soft dough ball.
- Roll into balls about 1/4 cup in size and press with tortilla press or simply roll between two pieces of parchment paper.
- Cook on hot cast iron skillet set to about medium high to medium heat, about 1 minute one each side.
