Have you ever had a mini apple pie? What is your favorite thing about fall? Mine is definitely, hands down, baking. The amazing aromas floating through my kitchen. These sensational fast oil free mini apple pies are no exception. The first thing my husband said when he walking in from work when I was making these, “oh my God what is that amazing smell.”

The awesome thing about these is that we get all the wonderful flavors and smells and don’t even need to do any baking! So these little gems are PERFECT for those warm fall days! The trick to making these super speedy and fast is to use prepared mini phylo crusts. Although they do contain some oil, they are still fat free, so the oil content is mediocre.

Can mini apple pies really be healthy?

Not only are these low in sugar (only 3 tablespoons, or about 2 teaspoons per serving) but they also have yellow squash. The perfect way to reduce calorie density, sugar content and up the fiber and nutrient count without sacrificing flavor one bit! You can even experiment with sweetening these little mini apple pies with maple syrup, agave, or monkfruit.

Ingredients
  

  • 4 honey crisp or granny smith apples peeled and chopped small
  • 1 medium yellow squash chopped small
  • 3 Tbs brown sugar not packed
  • 2 tsp arrowroot powder or cornstarch
  • 1 pinch Himalayan pink salt
  • 1 lemon juiced
  • 1/2 tsp cinnamon ground
  • 2 packs mini phylo crusts we found ours at King Soopers

Instructions
 

  • Add all ingredients to a medium pot on the stove over medium heat, stir to combine
  • when everything starts to bubble reduce heat to low. Cover and allow to simmer for about 10 minutes
  • Let cool for a few minutes and fill phylo crusts.
  • Enjoy!
